Couscous with Vegetables and Chicken
1/4 cup of couscous
1/2 cup of water
tablespoon of olive oil
spinach, carrots, broccoli, and red pepper (left over from a salad)
diced chicken breast
Italian spice mix
Chop the vegetables.
Bring the water and olive oil to a boil. Add the couscous and let it steep on low heat for about 5 minutes. Add the vegetables and continue to steep.
I microwaved the chicken and put it on top. There is also a layer of tomato sauce in there, but it wasn't necessary and I wouldn't use that again.
